This little place is filled with high-school and college-aged kids until the early hours. The daytime crowd is much smaller, older and more picky about their coffee. Paris has sandwiches, boards and pastries, but the draw is the coffee. There's a marvelous house cup and a wide range of specialties. THe best are the Café Mexicana--a sublime espresso blend of Mexican coffee and chocolate--and the Crowbar--the coffee equivalent of a Long Island Iced Tea.

Paris Coffee Roasting is a fantastic coffee shop. Their food and coffee is top-notch, and while it does command a premium price, the quality is very high. Their coffee is freshly roasted and they get their chai and other teas specially blended from a local spice shop. When you support Paris Coffee Roasting, not only are you supporting a local small business, but one that works with other small businesses in the area. The people who work at Paris are great. I've never had a single problem with the service. When you go into Paris late at night, when the place is packed, you'll still get great service. The wait staff are attentive but not annoying and get your order right every time. I'm more than happy to drive half an hour to Paris Coffee Roasting multiple times per week because of the quality of food and drinks, the great people working there, and the fact that I'm supporting a small business.

Okie dokie. So I'm guessing that all of the people who have written bad reviews about this place have never worked in a restaurant. And if you have you should know that when you're almost past the maximum capacity of the building it is sort of hard to treat every customer like they're the only customer in the place. When things get busy (and I don't mean like half the place busy. I mean the entire place is so busy that some people are standing) they can't focus on you and treat you like you're God's gift to mankind. I have been served by pretty much every person that works there and every single one of them has been extremely kind. I only know two of their names (Jason and Shatsta?) but at most places when it's that busy your server won't even give you the time of day let alone their name. Yes. Sometimes you do have to wait for your coffee but it isn't as if they are purposely keeping your coffee/tea/food from you. They're just so busy that they can't bring everyones coffee/tea/food out to them in three minutes. And if you want your coffee or food or tea go drink substandard coffee from Starbucks or go get your food from a fast food joint. Ok? Great things take time. And for the people that say they are "insanely overpriced" you should get over it. When they roast their own beans and make their coffee with care you darn well better expect it to be at least two dollars over the mediocre coffee at Starbucks. Thanks!

Why all the hate mail for Paris? I don't recognize the place where I ate in the reviews below. I had a business lunch at Paris yesterday, visiting the coffee shop for the first time since high school. My memories were of 17-year-olds dressed in black, drinking coffee with copious amounts of milk and sugar to mask the fact that we hadn't quite "acquired" that taste yet, and the smell of Cloves. I was a little dubious about the location being up to business par, but gave it a go. I'm happy I did, as a favorite former haunt has grown up quite nicely. I walked in and grabbed a table. I had a menu and water within minutes, brought by a pierced waitress that never would have gotten a first interview at a chain. She was quick and knowledgeable (leading me to the pesto chicken sandwich - trust me, eat this) and checked in often enough to be helpful but not annoying. And she didn't wear the plastic Starbucks smile that can't be sincere on a $7.50/hr employee. Just a real person doing her job - good enough for me. So was the experience akin to the Second Coming of coffee? No. But I don't look to a coffee shop to be the epitome of fine dining. I'm not seeking a gastronomical soul mate. I want a solid, local alternative to all of the cookie cutter corporations that Denver seems to breed in its restaurants. I found that at Paris. Do I love the smoke? No. Would I still come back for the chai? Absolutely. And I can't wait to try the wine bar.
