Pegasus has a wide selection of foods--from american (burgers and sandwiches), to Mexican (burritos), to Greek (gyros.) They also have a great kids menu, with breakfast options available to kids into the early afternoon. I love the gyros and the club sandwich (similar to one's at TGI Friday's.) My husband has yet to find something that he's crazy about. It's a fairly large restaurant, so there's enough foom for larger groups. A couple of odd things--the first time I went, I thought I was entering a someone's house...I didn't see any clear signage for the restaurant (just trusted that I had the address correct.) Also, and I don't know why, the waitresses seem to have this wierd auora about them where they make you feel like you shouldn't be there--I guess I'm used to having a nicer welcome, and happy servers. Maybe we just seem to go after they've had some mean customers, and they don't realize that they seem grumpy. All and all it's worth a try.
Pros: Gyros and Club sandwiches
Cons: Grumpy servers

Pegasus Restaurant, owned and managed by John DeLay. Pegasus has been in Castle Rock for the past 18 years and in its current location at 313 Jerry Street since 1999. John bought a small stagnant Greek restaurant (he calls it "a Greek/American dive") on East Colfax in Denver 23 years ago. At the time he bought the original Pegasus, the Greek restaurant had added a couple of Mexican items to their Greek menu. Since John moved Pegasus to Castle Rock in the 1980's, the Mexican entrees have grown in popularity until they represent fully one-half of all the sales for Pegasus. John has been blessed with a number of loyal long-term employees during the years he has been a Castle Rock restauranteur. One of the most popular of the dishes at Pegasus is the Chile Rellenos. Head Chef, Gabriel Torres, one of the four Torres brothers who work at Pegasus, has perfected the art of the Chile Relleno over the 15 years he has been at Pegasus. To see a streaming video showing Chef Torres make his famous Chile Rellenos, go to signaturedishesofcolorado and visit the Pegasus page. John Delay is both blunt and passionate about his restaurant and its relationship to the town of Castle Rock. "Over the years I have watched families grow up. I have hired kids whose parents I have known since before they were born. That's the good thing about living in a small town like Castle Rock in Colorado."
Pros: Great Food, Warm Atmosphere
Cons: Sometimes the wait is long, but they are actually making the food from scratch!
