Editorial Review for WaterCourse – by David J. Soto

In Short
This low-key spot has a community table for those who'd rather not wait in line for their own booth. A crowd of starving vegans, righteous vegetarians, Capitol Hill residents and healthy eaters gathers here. The true gems of this earthy establishment are the French toast and buckwheat pancakes. Both are sweet and remarkable in texture and taste. The scrambled tofu is yummy. Lunch is loaded with macrobiotic plates and veggie wraps.

With such an incredible breakfast menu, the lunch side of things is usually overlooked. Check out the wide range of fresh juices and soy-based coffee drinks.

Watercourse being one of the best overall restaurants in Denver, and the best vegetarian friendly restaurant that I know, you have to expect it to be very busy, which it usually is. So it's good that they moved to a larger building that can accommodate more customers at once, although I did prefer the ambiance at the old place. My party of three arrived early last Sunday evening for dinner, and we didn't have to wait for a table at all. Our server was attentive and we ordered drinks, appetizers, dinner and dessert. They got everything right, everything delicious, and everything was served promptly. I think now that the new location has been open a while they've worked out a lot of the kinks. I've been a vegetarian for 12 years and have eaten veggie food in California, Seattle, New York City, and London, and I feel lucky to live near Watercourse, the best veggie restaurant overall that I've been to. Their menu is exhaustive, with every vegetarian protein source you can think of (tofu, tempeh, seitan, legumes, etc), so many ethnic foods represented (including American, Thai, Mexican, Mediterranean,...), and creatively combined and seasoned foods. I always try something different and I'm always delighted. My mouth is watering just thinking about it. And all that at affordable prices. Go there and enjoy!

Pros: The food, the selection, the affordability

Cons: parking, occasional wait times

My fiance and I eat here at least every other week on Friday nights. We know we can get something healthy and full of flavor before going to the movies or going out on the town. Portion sizes are LARGE and in CHARGE, so you can absolutely split a dish or be prepared to box half of it to go! We have only gone on Friday nights before the dinner rush, and the longest wait we've had is a half hour. I spoke with the host last week, and he said they definitely take reservations, so we'll be doing that next time around! There are usually people waiting to be seated, and once you're dining, you can tell everyone around you is going to take their sweet time eating and chatting it up. Seriously, the people watching is half the fun when you go to this place. You won't be able to count on your hands and feet how many pairs of thick rimmed glasses, bohemian scarves, and faux-hawks there are. Now to the food. I usually get the Juan Wrap or the Veggie Burger. The green hot sauce they have on the table REALLY heats things up! Also be sure to try the organic ginger ale! The desserts always look AMAZING. We recently split some gluten free carrot cake, and it was delicious. If you're a meat eater, you will DEFINITELY be able to find something on the menu you'll like. There are so many choices on the menu that you'll go crazy trying to decide which one you'd like to try! I would definitely recommend eating here. I haven't tried the breakfast menu yet, but that is next on my list to do!

Pros: Tasty food and funky people!

Cons: The wait for a table and for your food to come. Sometimes people bring their loud kids!
