Best Sushi Rice and Chefs.
The thing about the denver sushi scene is all the top restaraunts get their fish from the same supplier, so assuming the better restaraunts follow industry standards when it comes to fish freshness, there are only a few "small details" that can make a sushi experience phenomenal. At Mt. Fuji, their sushi rice is straight out of Nagano. My friend Makiko says it's the most traditional rice she's had outside Japan, Seattle, or New York. Then there's the staff, especially the owner/manager Billy. They are super friendly, and unlike some of the more glamorous denver sushi places, they'll talk you through the menu if you're a novice, or they trust you to know when you want something exotic and don't patronize the gaijin.
I have never tried their Hibachi, though I have it on good authority that it is on par or better than the similar fare in other hibachi places, but since i have no personal context i wont stick my neck out by advising one way or the other on that.

Love Their Sushi! Have not tried the teppanyaki grill.
Found this place a few weeks ago. Love their Sushi. We have been in Denver for almost 4 years and this is the BEST Sushi we have had since we moved here. We lived in Japan for almost 5 years and after living in Tokyo we have had a hard time finding fresh tasting Sushi with good rice. This is the best we have had in Denver so far.
As for the hibachi tables; it is not a true Japanese hibachi it is a modern teppanyaki grill. It is not one you can cook on yourself. It is the kind they have a chef for a large table and you have to choose from a menu of what you like and then the chef puts on a show as they cook your food.
We truly wish they had the small modern teppanyaki grills you use yourself seeing we all miss eating okonomiyaki also called Hiroshima-okonomi. We use to go into small restaurants in the Hiroshima and Yamaguchi Prefectures in Japan and eat okonomiyaki. I guess in a lawsuit crazy country having a grill you can cook on is probably not a good thing.
Best Yellowtail Rolls I've ever had!. This place has really good sushi at good prices, reasonably fresh tasting fish with good rice. The yellowtail roll is the best I've ever had and their other rolls are really good too. I haven't tried the hibachi grill yet but that's a nice draw for future visits with friends.
